Blueberry Scones

Ingredients
- 2 cups Spelt flour
- 1 TBS baking powder
- ½ tsp salt
- 1/3 cup coconut oil
- 1/3 cup agave
- 1 TBS vanilla
- ¼ cup hot water
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a medium bowl, place the flour, baking powder and the salt. Whisk together. Add the oil, agave, vanilla and mix together until a thick slightly dry batter is formed. Pour the hot water into the batter and mix. Gently fold in the fresh blueberries.
- Use about 1/3 of a cup of batter per each scone. Bake for 20 minutes. Remove from the oven and let the scones stand for about 15 minutes to cool. Enjoy!
