Hi friends!
This is a great recipe for the summer months when everyone is having outdoor dinners and BBQ style parties. I actually had just made a batch of quinoa and needed something to use up the leftovers with. This was the perfect idea. I normally make my quinoa cakes but this seemed a bit hearty for everyone. We turned these into burgers with the works but you could throw one or two on top of a giant salad with some tahini dressing and that would be amazing too! Hope you enjoy!
Quinoa Chickpea Burgers

Ingredients
- 2 TBS. flaxmeal
- 2 cups quinoa
- 1 1/2 cups garbanzo beans (homemade is best but canned or boxed beans work in a pinch!)
- 1/2 cup onion
- 2 cloves garlic
- 1/2 cup parsley
- 1 1/2 tsp. sea salt
- 2 TBS. Hemp seeds
- 1/4 cup oat flour
- 2 TBS. olive oil
- 1 piece of whole grain bread toasted and made into bread crumbs
- 1/2 tsp. cumin
- 1/2 tsp. turmeric powder
Instructions
- Preheat oven to 400 degrees.
- In a small bowl mix the flax meal with 4 TBS. water and let sit for 10 minutes. This will make a "flax egg" and help with binding the burger together.
- In a small food processor chop garlic, onion, and parsley. Add in garbanzo beans until it makes a chunky paste. Transfer this to a bowl.
- Toast your bread and then place in same food processor. Pulse until bread crumbs are formed. Add this to your mix in the bowl with remaining ingredients of quinoa, hemp seeds, oat flour, olive oil, salt, flax egg and spices. Mix together making sure the spices and throughout the mixture.
- Then take a 1/4 cup measuring cup, scoop the mixture and roll into a ball, making each one about 1/4 cup in size. Place on a lined baking sheet and shape into burgers.
- Place into the oven and bake for 15 minutes. Gently flip the burgers and place back into the oven for about 12-14 minutes.
