Summer Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- ½ tsp. salt
- 1/3 cup olive oil
- ¼ cup lemon juice
- 1 tsp.garlic salt
- 1 bunch cilantro chopped fine
- 1 bunch fresh mint leaves minced very fine
Instructions
- Bring water and quinoa to a boil. Cover and simmer for 20 minutes. Let cool. Place quinoa into a bowl and mix in olive oil, lemon, salt and garlic salt. Finely chop cilantro and mint. Toss into quinoa. Serve fresh!
