These sweet and salty bites are filled with a burst of flavors! Sweetened with dates and grain sweetened chocolate chips with the perfect contrast of salty from the cashews and sea salt. The best of both worlds! A must try!!
- 1 ½ cups raw cashews
- 1 ½ cups pitted dates
- ½ tsp himalayan sea salt
- 2 tsp vanilla
- 1 tbsp water
- ½ cup grain sweetened/vegan chocolate chips (I order from www.thrivemarket.com)
- Pulse the cashews until they are a fine flour. Then add the dates, salt, vanilla and water. Pulse again until they stick together. Press into a square pan lined with parchment paper. It's easier if you get your fingers a little wet so the mixture doesn't stick to your fingers. You can also take these and roll them into bite size balls, which I tend to do more often. Refrigerate for about 30 minutes and then enjoy!
