So, it’s raining here in LA today which means I’m in my kitchen all day with flour and messiness everywhere. Today I made this ooey gooey banana date chocolate chip bread. It is ridiculous. Your house will smell amazing not to mention your taste buds will be exploding. So go ahead and whip up a loaf (or two!) and share with your friends. They will LOVE you! Happy baking!

Vegan Banana Date Bread

Flax egg
- 1 Tbl Ground Flax Meal
- 3 Tbl Water
- Mix together and set into refrigerator for 10 minutes
Dry ingredients
- 1 cup oat flour
- 1 cup whole wheat pastry flour
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- Mix dry ingredients well.
Wet ingredients
- In a separate bowl add
- 2 mashed very ripe bananas
- 1/2 cup maple syrup
- 1/3 cup non dairy milk
- ¼ cup melted coconut oil
- 2 tsp vanilla
- Add flax eggs.
- Mix well.
Instructions
- Add wet and dry ingredients and mix well…
- Add 8 chopped dates and 1/2 cup chopped walnuts.
- You can also add 1/4 cup vegan chocolate chips! (I always highly recommend this!) 🙂
- Lightly oil a non stick bread pan (I used coconut oil) Place the dough in the pan and bake at 375 degrees for 35-40 minutes.
